You can still run a 275/40/17 on a 8.5" rim. It takes about an inch or more to actually mess up the sensors.

Half inch smaller than stock, wouldn't matter that much. I'm running a 285/40/17 on stock SS's on the rear of the Z, no issues. We're only talking 10mm here, .393 inch.
You go up to 265 on an 8.5, Just got to make sure you get your Diameters close, You may end up going to a 45 aspect ratio on the front to get the front rear sizes right. Tire rack let's you see the specs for all the tires they sell, You can see diameter, width, and rev's mile. Rev's per mile is what you want fairly close. The wheels you are looking at must be aftermarket Z06's with a machined face if they are 8.5 wide.
I think the stock vette tires are 245 45's on 17's and 285 40's on 18's

So it looks like I'd be better off with the 245/45R17's and 295/35R18's as they make BFGoodrich g-Force T/A KDW 2 tires or Firestone Firehawk's in both of those sizes and I would like the front's and rear's to match if at all possible.

Yeah, that's a good choice. just compare to the stock 275's you haveon the back now, it will throw your speedo off a small amount as well. the BFG's have a smaller treadwear rating than the FireStones which means they will wear faster but stick better. Compared to the 180 treadwear Kuhmo's I run, they should last forever!
